The world-renowned Ispahan croissant

Because I’d heard so much about Pierre Hermé’s celebrated Ispahan flavor but had only ever sampled it in a macaron form, never the croissant or cake, I had to cross at least one off the list when I was in Paris.

The croissant it was! And a seriously delicious croissant at that. Crisp on the outside, soft and doughy on the inside.

A fine, sweet glacage and bits of candied berries.

(Just look at those lovely layers.)

Inside, rose-flavored almond paste and raspberry-litchi gelée.

It was all over much too quickly.

  2. Your photos are mouth-watering delicious! I have not had that flavor and rarely eat croissants in Paris. My preference has been for macarons and baguettes and one can only eat so much - hah! I did post on a deliberate choice of croissants this week and will choose again to try the Ispahan at PH. Miam-miam!

  3. These croissants were no doubt unforgettable-lucky you to have sampled them in Paris! I sincerely doubt if there is anything close to this in the US. Thanks for sharing.

  4. Oh wow! That looks sensational. I think I had an ispahan macaron last year. I didn't know about the croissant- this is definitely going on the TBE (to be eaten)
