You know you’re in Paris in January when…

Every boulangerie and patisserie is peddling les galettes de rois.

Beautiful, delicious galettes de rois!


Thursday, January sixth is the Day of Epiphany in France, which is celebrated virtually all month with wonderful galettes des rois.


They're quite simple: essentially frangipane (almond cream) inside pâte feuilletée (flaky puff pastry), made in different sizes, usually round though sometimes square.

Some patissiers also add chocolate or fruit or alcohol, but it's always a recipe for deliciousness.

I make mine square with a basic recipe. I reluctantly insert a fève from my extensive collection as long as I am serving to family... I really do not want to give up the fève (quite selfish of me). Where I live, people put in a plastic baby after the cake is baked so.....

I never cease to wonder how it is, that when something is 'IN' whatever it may be in Paris, you see it EVERYWHERE!!
maybe because of the arrondissements - each patisserie MUST have it's whatever thingie is required for said holiday...or said fashion of the moment.
Paris is a small town to me that way. New York could never be so cohesive.
How to choose?
